Applesauce Oatmeal Muffins Are Yum In My Tum!

I'm sitting in the Phoenix, Arizona airport waiting for flight two (of the day) to take me to good ol' Columbus, Ohio! While I was packing for my work trip yesterday, I decided to take a "Bennerfit Break" to cook up a recipe I was anxious to try! Applesauce Oatmeal Muffins that are only 92 calories a muffin... count me in, I say!! I love anything with apples -food, juggling, etc. - so I had to give this recipe a whirl.

It's simple, healthy, nutritious, and delicious!

Here goes...

What you need:

1 cup old fashioned rolled oats (not instant)

1 cup almond milk or nonfat milk

1 cup whole wheat flour

1/2 cup brown sugar

1/2 cup unsweetened applesauce

2 egg whites

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1 tsp sugar

raisins or nuts (optional)

Step 1:

Soak your oats in the milk for one hour.

Step 2:

Preheat oven to 400 degrees.

Step 3:

Mix your egg whites and applesauce into your oat and milk mixture.

Step 4:

In a separate bowl stir all of your dry ingredients together (except your cinnamon and sugar).

Step 5:

Combine your wet ingredients into your dry ingredients bowl and mix it all together.

Step 6:

Spoon muffin mixture into your muffin pan. If you don't have muffin cups make sure you spray your pan with some type of low calorie oil.

Step 7:

Combine the cinnamon and the sugar into its own little bowl and then sprinkle it onto each little muffin.

Step 8:

Place muffins into oven and bake them for 20-25 minutes

Step 9:

After you have let them cool a bit, eat them up because they are DELICIOUS!
