There are a lot of simple combinations in life that make people happy. Peanut butter and jelly. Macaroni and cheese. Hall and Oates.

For me, I've discovered a simple piece of happiness in this world - avocado toast. The thing with avocado toast is, it's versatile. Maybe I need a little breakfast? Avocado toast. Hmm, what will I have for lunch today? Avocado toast. I got home late for work and dinner STAT!! Avocado toast. Three meals in one. You are brilliant avocado toast. You've really done it.

I know many of you may already be on board the avocado toast train, but here's my mini recipe that makes me the happiest of all.

AVOCADO TOAST

INGREDIENTS:

1/2 avocado (you might need more depending on your bread)

2 pieces of whole wheat bread, toasted (any bread will really do but stick with a whole grain, whole wheat genre for good healthy measure)

3/4 tsp. olive oil

1/2 tsp. red pepper flakes

hefty pinch of pepper (flavor to your liking)

pinch of salt (flavor to your liking)

DIRECTIONS:

{You can go about this many ways. This is just how I roll.} 

Toast your bread.

Meanwhile, halve your avocado (keep the pitted half stored, it will stay greener longer that way). Remove and dispose of the outer skin. Cut avocado into small pieces, and place the goodness in a small bowl. Pour in olive oil, red pepper flakes, salt and pepper. Mix everything with a spoon to your desired consistency. Spread on to your warm toasted bread.

Destroy immediately for ultimate satisfaction.
