Blueberry Quinoa Granola

We went out for breakfast this weekend at a quaint little restaurant in good old downtown Burbank called Another Broken Egg Cafe. Breakfast is the most dangerous of all meals. Admit it. You want a waffle covered in syrup right now, don't you? I sure do. And it's 10:30 at night. And I'm full of food right now. I still want that in my mouth.

Anyways, we were out for breakfast and I was faced with the ultimate decision: Do I go healthy with my egg whites and fruit or do I just go for it and get a pancake the size of my face? That was when I noticed something peaking out at the menu at me. Granola with whaaaat? Quinoa? Why yes please! I think I will!

And so I did, and immediately fell in love.

The next day I was sitting around at work thinking of food (which I often do even in the most busiest of moments) and I wanted that granola. REAL BAD. So on my lunchbreak I did a quick brainstorm as to how I could concoct this delight myself with the same tasty perfection as the Broken Egg. I whipped this quick and easy combo together that night in hopes that it would live up to my weekend munching experience, and just my luck - it did! And it was so delicious that I ate this for dinner two nights in a row.

Let's just get right to it, shall we?

ingredients Blueberry Quinoa Granola on Benner Fit

Blueberry Quinoa Granola {Makes 5 servings}

5 cups of granola (I used a blueberry granola with flax) Blueberries, strawberries and bananas (to your liking)

For the topping: 6oz vanilla yogurt (or one small container) 2 1/2 tbs. coconut milk

For the quinoa: 4 oz. quinoa (cooked) a splash of coconut milk (approx. 2 tbs.) 2/3 cup of frozen blueberries 1 tsp. agave

Over medium heat, warm your coconut milk and frozen blueberries together. Once the blueberries have broken down and combined with your coconut milk to create a dark purple liquid, add your quinoa. Stir until the quinoa it is covered in the blueberry milk. Add agave to sweeten.

Meanwhile, add one cup of granola to a bowl.

Add sliced fruits to your liking on top of your granola.

Combine the vanilla yogurt and coconut milk in a small bowl to create a more liquidy yogurt topping. Drizzle over your fruit and granola.

Top off your treat with a tablespoon or two of your blueberry quinoa.

Mix it all up and enjoy!
