BS in the Kitchen: Chickpea and Avocado Sandwich

On today's BS in the Kitchen, we whipped up a little recipe with inspiration from Two Peas and Their Pod! The fabulous recipe can be found below:

 

INGREDIENTS:

1 (15 ounce) can chickpeas (or go garbanzos!) 1 large (or 2 small) ripe avocados 1/4 cup fresh cilantro, chopped 2 tablespoons chopped green onion 1 lime (for the juice) Salt & pepper, to your liking Bread for toast!

We made ours open face, but if you go sandwich style, add some tasty toppings - spinach and sprouts sounds like a delightful combo for this sandwich!

 

DIRECTIONS:

Drain the chickpeas and rinse them with some water.  Dab dry with a paper towel.

Toast up the bread.

In a medium bowl, combine all of your ingredients (bread excluded, of course) and smash them up with a fork or potato masher. Flavor with salt and pepper, to your liking.

Spread your avocado/chickpea smash on your toasty bread and enjoy!
