Comfort in Food: A Butternut Squash Soup Recipe

Sometimes this life can really bear down on us. The stress from work, the anticipation of the future, an endless to-do list, the loss of a loved one.

In these times your heart and soul burn for something to ease your mind. They crave for that moment where the tension breaks and allows your body to flood itself with comfort.  And comfort can come from a million simple places: a hand to hold, a warm bath, a glass of wine, stretchy pants, the quickest of glances from a loved one.  With these simple moments we keep going. We move forward. We grow stronger. It's not always in an instant, but the culmination of these little blips in time will surely lift the burden that can weigh down the strongest of shoulders.

And then of course there is food. The ultimate yet essential comfort - one that keeps us energized, fulfilled and powerful.

Today I'm hoping to bring you all a few ounces of comfort by means of a soothing cup of soup. Through this winter cold and these dreary rainy days, this butternut squash soup will fill your heart and belly with contentment. I hope this recipe {from  The Food Lovers Kitchen } can alleviate some of the stresses in your lives.

Butternut Squash Soup

A healthy butternut squash soup to add to your recipes!

INGREDIENTS: 1 whole Butternut Squash, peeled and chopped (or two Trader Joe's bags of pre-cubed butternut squash) 1 whole Onion, chopped 1 quart Chicken Stock  {Next time I might give veggie a whirl!} 1 tsp Ground Cinnamon 1 tsp Salt 1/2 tsp Ground Nutmeg 2 Tbsp Coconut Oil, Organic

DIRECTIONS: In a large pot, sauté your chopped onion in coconut oil. Throw in cinnamon, nutmeg, and salt. Add chopped butternut squash to pot, and pour in broth. Boil the butternut squash in the broth until tender. Puree that soup using a food processor or high-speed blender until it nice and smooth. Garnish with a sprinkling of cinnamon, add some chopped walnuts if you like. I threw in some dried cranberries. Go ahead and be daring!

Now bundle up under a blanket and enjoy a bowl or two of this healthy and cozy soup. Not too sweet, not too savory. A perfect balance.
