Did someone say tacos?

I have an affinity for Mexican food. It can get heavy or as Chrissy Teigen (John Legend's beautiful and hysterical wife) says, " bloaty mcbloatstown." But man oh man is it good. I like to keep it simple and quick in the kitchen. I am not the girl that likes to patiently stir the risotto but I do appreciate a good home cooked meal so I get creative. I was craving homemade tacos because this hilarious photo kept frequenting my Facebook newsfeed last week.

Guess what? YOU can have both!

Kale Tacos!

Here's what you need

1) Touch of olive oil, salt, pepper, and turmeric

2) Two handfuls of kale and mushrooms

3) 1/2 can of organic black beans

4) Corn tortillas

5) Beet hummus from Trader Joe's or slice some beets up

Cooking time (I so desperately just wanted to write HAMMER TIME)

1) In a pan combine olive oil, salt, pepper, turmeric, kale, mushrooms, and black beans. Sautéed on medium until done. I found it was between 5-7 minutes

2) Heat corn tortillas and spread beet hummus all over one side of them.

3) Place kale combination on top of the beet hummus or corn tortilla and voila it's time to EAT!

Autumn in NYC...

I've been to New York in the winter, spring, summer, and this was my first time in the fall…

It was so dreamy...

I'm having post NYC trip disorder. It's true. I have loved New York since I first learned about New York as a wee little one. My childhood dream when I was just a mere ten years old was to be an optometrist during the day and a broadway star at night. I have always been very ambitious! :)

I've been fortunate enough to travel to NYC a few times a year for work and or play. This particular trip was a combination of the two which was ideal. Although, I did not end up becoming an eye doctor or a musical theatre performer I feel like the luckiest lady around that I get to do what I love everyday.

No matter where I travel to fitness is a part of my daily routine. And in New York City the fitness studios and class options seem endless. This particular trip I focused on my yoga practice and found some beautiful spots to do so.

I checked out Strala Yoga which is the wonderful, Tara Stiles, studio located in SOHO and loved the happy spirit of this space. It was light, bright, and welcoming! All the instructors have a positive and approachable presence which is really beautiful to walk into.

Jivamukti is a very traditional yoga studio located right near Union Square. Every instructor here has hours and hours of training and experience so you know you are in dynamic hands. The class I took had a beautiful flow, the transitions were seamless and although we held our poses for an extended length of time I really felt the energy and heard the breathe of all the students in the room which helped to center my focus. After class I ate at a delightful vegan cafe they have in the studio. The food was AMAZING! Even if you're not a yogi but you like to fill your body with healthy foods go to this vegan cafe, I highly suggest it!

I also popped into a group pilates class and a Yogaworks studio which has locations all over the U.S.

When you are on the road and you don't necessarily have the time or income to pop into a class remember that BENNERFIT circuits are always there and available to you! YOU deserve feel your best! Making yourself a priority is not selfish at all but rather a necessity because when we feel our best we do a better job of being that for everyone around us.

USANA 5day Cleanse Overview

I did it folks! 5 whole days of cleansing! I can't believe I actually made it through. I've got discipline but I didn't think I had 5 days of it!

I posted about my day one experience and I was pleasantly surprised. I usually go into new things with an open mind, but I must say the thought of cleansing for 5 whole days seemed slightly daunting.

Usana and April Norris (USANA Independent Associate) kept me in check through this entire journey. I would receive daily emails filled with inspiration which were very beneficial during this cleansing process. Lets face it there is food temptation everywhere! What I LOVED most about this cleanse is that you are literally eating or drinking every two hours. That is way more then I do currently. Eating this often speeds up your metabolism and gets that body back in check.

I can honestly say, I feel better! My personal goal was just to see if I could actually make it through five whole days of cleansing. April was very kind in letting me know that I could eat as many fruits and veggies as I needed. I am very active so I have to be aware of my caloric in take.

Moral of my cleanse story is that the USANA 5day RESET Cleanse is pretty darn wonderful! I really want to stress to all my Bennerfitters out there if you have wanted to cleanse, this is the one to do because it's totally doable! You don't feel hungry all the time since you are constantly eating or drinking. All of the smoothies taste delightful, the chocolate was my personal favorite! The Usana protein bars were both filling and delicious. And I love my fruits and veggies so the fact that I could eat them whole without putting them down a juicer was a big bonus!

Quinoa "Fried Rice"

I've been egg hankering like crazy lately.  Breakfast burritos for dinner, a fried egg on a veggie burger, and I always secretly love me some pad thai with a little bit of egg hiding behind the peanutty noodles. Which leads me to fried rice. PUT AN EGG IN IT! I've been spying on quinoa fried rice recipes for the last few months and finally pieced together my very own combination which was light, fluffy and super flavorful. Enjoy!!

 

ingredients

INGREDIENTS

1 cup cooked quinoa (for this I used 2  pre-made packages from Fresh and Easy)

1 1/3 cup of peas & carrots (add any additional veggies you like as well!)

3  green onion shoots (leaving the whites behind, or adding for a stronger flavor)

1 tsp. minced garlic

1/2 tsp. ginger

salt and pepper to liking

1 tbsp. coconut oil

2 tbsp. (and a splash) of soy sauce

3 drops of sesame oil

3 eggs (add more to your eggy liking)

Optional: Add meat, tofu, or veggie patties

DIRECTIONS

If you dont have the pre-made quinoa, visit the Kitchn for the  lowdown on how to cook a cup's worth of this tasty "grain".  (Quinoa is actually a seed posing as a grain. It's playing all of us. Nerd up on your quinoa facts here.) If you are lazy like me, heat up your pre-cooked quinoa so it's rarin' to go!

Crack your eggs into a bowl, add a splash of soy sauce along with 3 drops of sesame oil and beat it! Give a pan a quick spray with (preferably) coconut oil so the eggs don't stick,   and scramble them up.  Set aside, once cooked.

It's a good time to say if you are adding meat, tofu or veggie patties - prep these now!

On high to medium heat, add coconut oil to a pan and stir-fry your veggies (peas and carrots), ginger, garlic, salt, pepper. Once the veggies are cooked, fold in the quinoa, eggs, green onions and any other additions you like (I included some Morning Star Chicken Patties). Add soy sauce to the dish and mix until everything is happily blended, and warm.

Eat it up, nice and hot!
