A year ago a few of my co-workers and I came up with a brilliant plan of entrepreneurial genius - open up a bar that sells alcohol infused popsicles. DON'T STEAL THAT IDEA FROM ME! That's Copyright Patented Brooke action. Ok, no... no it's not. In fact I'm sure this has to exist somewhere in the universe already... But this business plan had me on a popsicle kick of epic proportions. I would try new blends - some with alcohol, some without - fresh fruit, fresh juice - and they were a hit at the summer parties. But winter came and despite the kick of booze - these puppies never could warm my icy bones. So the popsicle maker (yes, it's true - my amazing sister played into my pipedreams and bought me the most incredible Zoku popsicle freezer) was put into the depths of the cabinets and my fruity days of paleta parties were gone. Now that the last bit of chill in the air from spring is behind us I started to get a little popsicle cravey again. And a fruit I hadn't really toyed with last year, the fruit that to me embodies summer, was calling to me. And so came forth this gem inspired by Focus on Health's recipe, and I decided to go alcohol free this year. (You can certainly add whatever fun you'd like though - just remember to freeze it a little while longer!)
WATERMELON MINT POPSICLES
INGREDIENTS 1/2 mini watermelon (seedless) 2 tablespoons agave 1/4 cup mint, minced 1 tsp. lemon zest 1 1/2 tsp. lemon juice Pinch of salt
DIRECTIONS: Puree watermelon in blender. Combine mint, agave, lemon juice and zest, along with salt. Pour into popsicle molds and freeze for 5 hours.
Remove from your popsicle trays and enjoy on a hot summer day!!
