Healthy Superbowl Snack #2: Zucchini Pizza Bites

Zucchini Pizza Bites on Benner Fit Do you remember sleepovers and stuffing your face with Bagel Bites and drinking endless amounts of soda and bouncing off the ceiling and then taking incriminating photos of whoever fell asleep first?

Me either.

Ok for reals - I was big into sleepovers back in the day. And sleepovers always meant a pizza party followed by a sugar frenzy. We would cram our little faces with as many cookies as possible and line the window sill with cans of Mountain Dew. (The ultimate challenge - how high of an aluminum pyramid could we build this time?)

This was way before I even knew what trying to be healthy was.

I don't know if it's because I live in L.A. where healthy living is a priority, or if the world has just become hyper aware since the early 90's of what we should be putting into our bodies, but there have been numerous occasions when I've been out to eat where I hear a request from a child that goes something like this:

"Mom, I'd like the spicy tuna roll with a green tea." Huh? "Dad, I think I'll have the saag paneer with some basmati rice." Woah, really?

Or the most shocking of them all...

"No, I don't want a burger. I just want a salad."

Children craving salads?! WHAT?! Seriously, who are these little creatures?

These little folks will probably go their entire child life without knowing of Mountain Dew's florescence, that Mallow Mars explode after 30 seconds in the microwave or that Bagel Bites even exist.

And to that I say, "Bravo, universe."

I hope one day my child (who will be insanely perfect and polite and adorable in every way) comes to me and says, "Mommy, can I have more Zucchini Pizza Bites?"

Yes, imaginary daughter. Yes you can.

Because this recipe is super easy and much more healthy than the alternative (that extra large pizza you were going to consume in one sitting. Ok, so when I say, 'you' I really mean, 'me.' Why is pizza SO easy to eat?! ).

Zucchini Pizza Bites on Benner Fit

INGREDIENTS:

  • 1 zucchini - sliced 1/4 inch thick or so
  • Pizza sauce
  • Non-fat/Reduced Fat cheese
  • Fresh Basil
  • Spray Olive Oil
  • Salt & Pepper

 

Zucchini Pizza Bites

DIRECTIONS:

Slice zucchini about 1/4 inch thick. Spray both sides of the slices with olive oil and sprinkle on some salt and pepper.

Throw these in the oven. If you are lucky enough to have a broiler - broil them for 2 minutes on each side. If you are like me and have a Broiler setting that doesn't really do anything - put the zucchini slices in for about 5 minutes on each side.

Take the zucchini and top with sauce, cheese, and basil (to your liking). Throw them back in the oven. If broiling - 2 minutes will do. Careful not to burn that cheese! If simply baking - another 5 minutes, or until your cheese has melted and crisped to your liking will do.

Serve while hot!
